Cheesy Oat Slice

6 oz rolled oats

6 oz jumbo oats

2 oz sesame seeds (optional)

4 oz margarine, melted

8 oz mature (very strong) Cheddar cheese, grated

1 teaspoon mustard powder

2 good pinches cayenne powder

1 teaspoon black pepper

2 medium eggs

2-4 tablespoons milk

Preheat the oven to about 180 °C/gas mark 4.

I use the microwave to melt the margarine and then add the dry ingredients, followed by the eggs, milk and cheese.

Mix well.

Press into a 'tray bake' tray (mine is about 6.2½" by 12", ie about 16 x 31 cm) lined with baking parchment.

Bake in a moderate oven until golden brown (35 min +).

Cut into fingers or slices as preferred while still hot then leave to cool.

Notes - don't have/like gin?  Can use more tea!  I used ordinary tea and brewed it for ages to make it strong.


Maple Syrup Flapjack (Sainsbury's recipe)

Ingredients - Makes 16

200 g unsalted butter, softened

100 g pure maple syrup

150 g light soft brown sugar

325 g porridge oats

Method

Cooking time: 25 minutes

Prep time: 5 minutes

Preheat the oven to 180 °C/gas mark 4.

Line a 16 x 25 cm baking tin with baking parchment.

Melt the butter in a pan over a medium heat (I used the microwave!).

Stir in the maple syrup and sugar, and simmer until it’s mostly dissolved (again I did this using the microwave).

Remove from the heat and stir in the porridge oats.

Spoon into the tin and bake for 25 minutes. Remove from the oven and score into 16 pieces using a knife.

Leave to cool in the tin before serving.

Can be frozen.
